Tonkatsu Narikura Opens in Taipei with a Taiwanese License Partner

How a celebrated Tokyo tonkatsu brand and a local operator worked together, from license terms to opening day.

On October 6, 2026, Tonkatsu Narikura opened its first Taiwan restaurant in Da’an District, Taipei, operated by a Taiwanese license partner.

Why this brand travels

Narikura, based in Minami-Asagaya, Tokyo, is known as a pioneer of low-temperature frying. The method gives its tonkatsu a snow-white crust and remarkably tender pork, made with carefully selected branded pork. It is the kind of signature dish that guests seek out, and that only works abroad if it is reproduced faithfully.

What TableBridge did between the brand and the partner

  • Negotiated license terms and supported the contract process with the Taiwanese license partner
  • Joined site visits, property selection, local test cooking and opening support in Taiwan
  • Produced the license materials the project required
  • Supported communication between the brand and the partner through to opening

One goal guided the project: guests in Taipei should get the same Narikura experience as guests in Tokyo. That meant working through store operations, how the food is served and the values behind the brand with both sides, from contract terms to opening preparations.

What this means for operators

Licensing a Japanese brand is about more than the contract: it means understanding what the brand cares about and agreeing on how it will run in your market. TableBridge works between the brand and the operator, from first inquiry and license terms to site visits, training and opening.
