Staff from Taiwan Begin Three Months of Training in Japan at Tonkatsu Narikura

Ahead of the Taiwan opening, TableBridge built the training program, schedule and evaluation sheets so the partner’s team could learn Narikura’s craft.

On March 4, 2026, staff from Taiwan began a three-month intensive technical training program in Japan, in preparation for Tonkatsu Narikura’s first location in Taiwan (then planned for July 2026). TableBridge, operated by Office Felicidad, Inc., supported the preparations.

Why training matters

Tonkatsu Narikura’s tonkatsu, slowly fried at low temperature in a pale, delicate coating, is highly regarded in Japan and abroad. Reproducing it overseas takes more than a shared recipe: it needs a carefully designed curriculum and a way to check each trainee’s progress.

What TableBridge prepared

  • Coordination with the local partner, the training environment and equipment
  • Training content that turns Narikura’s techniques into steps that work across language and culture
  • A training schedule worked back from the opening date
  • Trainee evaluation sheets that make each person’s level of skill visible

What this means for operators

When you license a Japanese brand, your team needs to learn the craft from the source. TableBridge works between the brand and the operator, from first inquiry and license terms to site visits, training and opening.

After the training in Japan, the trainees return to Taiwan for final preparations.
