Cooking Tonkatsu Narikura with Taiwanese Ingredients: On-Site Test Before Opening

Before the Taiwan opening, local ingredients, equipment and every cooking step were tested together with local staff.

In April 2026, TableBridge (Office Felicidad, Inc.) carried out on-site test cooking in Taiwan, in preparation for the opening of Tonkatsu Narikura’s Taiwan restaurant.

Why test locally

Tonkatsu Narikura is known for its “rare katsu” with a delicate, pale coating, achieved through a unique low-temperature technique. The test was conducted to confirm that this quality can be maintained using ingredients sourced in Taiwan.

What we did

  • Selected and arranged key local ingredients such as pork, breadcrumbs and oil
  • Checked the suitability of the kitchen equipment and cooking environment
  • Cooked together with local staff to verify that each step can be reproduced

The test confirmed that quality equivalent to that in Japan can be achieved, from local sourcing to the details of the cooking process.

What this means for operators

Before opening, both the brand and the operator need confidence that the product works with local sourcing. TableBridge works between the brand and the operator, from first inquiry and license terms to site visits, training and opening.
